Very interesting course for someone who has never done science or nutrition. Doesn't require any background knowledge and it is very reasonable for a first year course. Assignments aren't too difficult.

I took this course as an elective over the summer semester and it was great. It is all offered externally so there are no contact hours. The assessments are reasonable - there is a weekly quiz (one downfall of this is that with it being external you may forget it and miss a quiz) and the writing assignments and final exam are very straightforward. There isn't really a need for the textbook - the course doesn't have much content but everything is presented thoroughly via videos and presentations on blackboard.
